Organic Protein Muffin Recipe

Since 2012, I’ve been creating digital wellness guides and researching natural beauty products, HIIT workouts, functional exercises, body positivity, self love, and tips helping you explore wellness and feel good.

This post contains a recipe for organic, no sugar added, gluten free, dairy free protein muffins.

In an effort to create a healthy treat that can be eaten quickly and on the go, I played with some ingredients and came up with these organic, gluten free, dairy free, no sugar added, protein muffins that I’m very excited about! I will also suggest how to make a vegan version (without eggs). Having these sitting in the kitchen will help encourage you to reach for a healthy treat versus snacking on junk.
Keep in mind, I did use measuring cups to record which measurements worked, but I also advocate taking a recipe and putting your own spin on it.

Here is what you need:

-A pinch of himalayan sea salt

-1/2 teaspoon organic Vanilla Extract

-3/4 cup of organic Coconut Flour

-1/2 cup Coconut oil or Coconut Butter (might have to pop it in the microwave to melt it enough to mix in)

-1/4 cup of organic Stevia

-1 scoop of Vanilla Raw Protein by Garden of Life

-1 scoop of Marley Coffee Raw Protein by Garden of Life

-2 eggs

-1-2 tablespoons of water (if needed: to make desired consistency)

Optional (to make a festive batch!)

-Add 4 small sweet potatoes to the mixture after they’ve been boiled (for about 5 minutes), chopped and blended. You could also use organic pumpkin! Make sure that if you buy canned pumpkin, it’s in a BPA free can (available at Whole Foods).

-You could also substitute chia seeds for the eggs if you are vegan!

Mixing:

-Combine wet ingredients separately from the dry ingredients, then combine them both together.

Baking Instructions:

-Bake at 350 degrees for 20-25 minutes

-Muffins are tasty warm, or cold!

-Best if stored in the refrigerator after they cool

These muffins are entirely organic, gluten free, dairy free, protein dense and delicious! Using the stevia in place of sugar keeps the sugar content at bay.They make for a perfect snack in between meals. ENJOY!
