Hilary is the creative chef behind Hilary’s Eat Well creations. She spent a year working as a farm apprentice with the Growing Growers program prior to opening Local Burger®, a first-to-the-market sustainable fast food restaurant in Lawrence, Kansas, in 2005. Now, she’s is hanging ten on the big learning curve of wholesale food business. Digging the challenges as much as the successes and thanking the Universe for the opportunity to work with an energy packed creative team committed to creating a better future for all.

This review will be a little bit scattered and full of random thoughts, as I have so many jumping into my head with this brand.
Out of all of the reviews I’ve written, this is one of my favorite. It added an extra layer to my appreciation for this brand to get to tour their facility with my husband. Becky at Hilary’s Eat Well could not have been more welcoming and eager to show us how Hilary’s Burgers are made–and she did so with enthusiasm. That, perhaps is my favorite aspect of the people behind this brand. You can tell that they believe in it, are passionate about it, and enjoy coming to work because of that. It’s infectious! Paul and I were lucky enough to meet Hilary, herself while touring the facility. She couldn’t have been more bubbly, free spirited and awesome. What a treat!
Hilary’s creates their burgers in Lawrence, Kansas, which is right down the road from us in Kansas City. It feels really good to genuinely feel supportive of a local brand–believing that they are doing great things and positively impacting how people eat.
I’m appreciative for the fact that this brand has reminded me that not all grain-like seeds are empty calories. I typically advocate and practice a way of eating that is loosely-based on the Paleo approach to eating. In summation, Paleo eating doesn’t allow any dairy, grains or processed foods. Needless to say, that idea is neat in theory, but not everything I eat has been picked fresh from our garden, and I’d be lying if I said I never took a bite out of a block of cheese. The idea is good, though–to refocus yourself to eat real, organic food. I aim to keep my percentages good–meaning that 80-90% of the time, I’m eating nutrient dense, real foods. The other 10-20% of the time I don’t beat myself up if I feel that I want to splurge.
I say all of that to say, Hilary’s has reminded me that you don’t need to be scared of healthy legumes (like beans), grains and seeds (that are commonly labeled as grains), as strict-paleo followers will have you doing. If you are consuming large amounts of real, whole foods, including lots of fresh vegetables, then there’s no need to be neurotic about eliminating these food groups. Just pick good ones that are rife with nutrients. It’s all about the quality of these products. You don’t want to eat a bunch of over-processed bread from your local grocery store, but you can seek organic, whole grain-like seeds and beans that will provide you with a dense nutritional profile. That said, I also believe very much in BALANCE. Allowing grains and beans doesn’t mean eating them all day every day, it just means that you can appreciate what they offer your diet and you can incorporate them in some fashion.
This variety of burgers allows you to do that, in an organic, junk free way. Though my husband and I do consume meat, I’d imagine that the fact that these Hilary’s burgers are vegetarian will appeal to many. They are also free of many common foods that contribute to sensitivities like: gluten, nuts, soy, dairy, yeast and corn. All of these ingredient lists are organically sourced, top to bottom. During our tour, I also learned that Hilary’s sources only high quality, organically grown ingredients that often times are from local farms. They even donate burgers that don’t pass their quality tests (shape & thickness) to a local food bank–so thoughtful and neat to me.
To elaborate on the grain discussion: By grains, I am referring to the millet and quinoa used in most of these burgers, and the black rice used in the black rice burger. Though I consider millet and quinoa to be seeds, many lump them into the grain category and avoid them because of that. I personally do not enjoy the calories from rice as much as quinoa and millet, thus the black rice burger isn’t one that I’ll come back to often. I also hardly ever buy rice, simply because I enjoy getting my carbohydrates from other sources instead. I do realize, though, that many enjoy rice and to them, I’d recommend that burger, because it’s got a great, tasty, hearty flavor. For those looking to stick to just seeds, sans a grain like rice, you can eat all of these burgers (exempt the black rice) and keep within your parameters. I realize those last two paragraphs were a whole lot of rambling, but that is the best way I know to get all of my thoughts out.
As far as which burgers I’ve enjoyed most and see myself purchasing often: I am loving the Root Veggie Burger and the Hemp & Greens Burger the most. I’m so impressed with the seasoning in both of these burgers–they are right on the money and make them so palatable and tasty–even to those who eat meat-based burgers. Hilary & Becky even shared a fantastic idea in combining some organic, grass-fed ground meat in with these veggie burgers to create a more robust, protein filled circle of goodness. I have yet to try it but eagerly await testing it out!
As for the dressings–WHOA! All of them are so good in their own right. What a genius idea to put chia seeds in an organic ranch dressing recipe. As far as initial wow factor in regards to the taste, my husband and I both agreed that the Creamy Remoulade Dressing is to die for. Hilary’s even mentions that it was a favorite at Hilary’s restaurant in Lawrence, Local Burger. It tastes like creamy, mustardy, zippy goodness. My husband suggested even using it as a dip, all by itself–its that good. I typically lean towards thick dressings, but actually really enjoyed the flavors in the Balsamic Thyme & Apple Fennel dressings. I was impressed to see the use of Dandelion root & Eyebright, two healing plants that give these dressings an extra punch of health. Becky at Hilary’s mentioned using the Apple Fennel dressing on a bean salad. After trying it, I’d agree it would be delicious when used that way. Even if you are unsure about these flavor combinations, trust Hilary! These dressings will really “wow” you.
My 5 year old stepdaughter tried the bites last night at dinner with the Ranch Chia alongside and had nothing but good things to say about them. She was “mmmmm”ing the whole time while eating them. It’s safe to say they are a hit with our young in! They’re a convenient food you can feel good about feeling your child (and your whole family!).
I’ve had such a pleasant experience interacting with the Hilary’s team and can’t sing their praises enough. This kind of company is RARE. They truly put the time and effort into making sure they heard my feedback in person, as well as making it abundantly clear how much they value quality and how they source their ingredients–& I think they’ve only just begun! Their passion for what they create will continue to grow and “infect” more people with this positive health bug. It’s so refreshing and I am eager for all of you to try their products. “Founder + CEO: Callalily England
In pursuit of changing the way the world views raw, vegan and gluten-free food, Callie England packed her bags and drove a U-Haul halfway across the country.
“It’s quite simple; my goal is to show the world that you can eat a diet high in raw foods, regain optimal health and still rock hot pink lipstick while doing so.”
Three years ago Callie created her blog, Rawxy.com, after realizing people had preconceived notions in regards to a lifestyle including living foods. She was passionate about a way of living that had changed her life, but frustrated her friends and family seemed to believe a plant-based diet meant trading in their makeup for a tree house in the woods. Rawxy, the merge of raw and foxy, became Callie’s outlet to persuade even the most superficial skeptics. Fusing her educational background from the Kansas City Art Institute with her love for cooking, Callie used food in it’s most natural state and tailored it with complimentary colors, flavors and styles to create dishes that were straight up foxy. The response Callie received from her friends, family and readers was incredible.
People who would never give raw food the time of day were now requesting food to purchase. Callie was so inspired it motivated her to make her passion her only focus. Callie created Rawxies to further her interpretation of foxy raw, vegan and gluten-free living to the masses. When Callie first created Rawxies, she was living in Kansas City, Missouri and working full-time as a creative director. Callie began selling her cookies through her online blog and after a few months of increased sales, decided to put it all on the line and began working day and night to make her dreams a reality. Ultimately, Callie decided to move to California after finding a gluten-free commercial kitchen in Sebastopol. She packed her bags, said goodbye to her family and friends and drove 2,000 miles west to grow the Rawxies brand.
“I honestly thought I’d never look back. I loved Kansas City, but at the time I saw California as an ideal location with many opportunities to expand the Rawxies brand.”
Callie spent 16 months in the Bay Area and in that time she landed over 60 accounts from New York to California. However, after a few months of sales, Callie quickly realized that the demand for Rawxies was far surpassing what she was actually able to produce. In order to increase production and distribution to meet this higher demand, Callie would need to invest in a dedicated manufacturing facility for Rawxies.
“The easiest decision I ever made was choosing to relocate Rawxies back to Kansas City. The coast is great for vacationing, but I was making a decision that required thinking long term and nothing trumped the idea of planting roots back in the Midwest. Everyone leaves the Midwest to pursue their passion on the coast (guilty as charged), but I was lucky enough to realize where the real opportunity is… and for me and my company, that opportunity lies right here in Kansas City.” Callie now resides in Kansas City, Missouri with her miniature poodle, Polo.”
“WHAT ARE RAWXIES!? The number one question we get. Rawxies are a hybrid of a nutritional food bar and an indulgent dessert: Not quite a cookie, not quite a bar. Rawxies can be enjoyed anytime of the day; breakfast, mid-morning snack, or dessert. While Rawxies are not calorically dense enough to be considered a true meal replacement, they could easily accompany a piece of fruit, a small salad or a cup of (coconut) yogurt to make a deliciously healthy and quick meal. With 175 Calories or less, Rawxies were created for healthy snacking on-the-go.
WHY OATS? Don’t get us wrong, we love nut and date bars, but personally felt like they weren’t maintaining satiation for an extended period of time. Creator, Callie England, wanted to bring in a grain that would slow down the digestion process and create a longer feeling of fullness. High in fiber, oats balance the nuts, dates and coconut to create a snack that won’t leave you reaching for the kitchen cabinet shortly after enjoying. Moreover, Callie created Rawxies with the masses in mind. She understood that oats represented a flavor profile that most people are not only familiar with, but as well, enjoy! So, she utilized such a product as her primary ingredient… After all, who says healthy food can’t taste great!? Not us.
WHAT SETS RAWXIES APART FROM TRADITIONAL LOW/NO SUGAR PRODUCTS? Rawxies are different from most traditional low carb/low sugar products, because Rawxies do not contain artificial sweeteners. Traditional low sugar products are often overflowing with what is labeled as ‘sugar alcohols’ – which, are known to produce many unpleasant side effects such as severe bloating and stomach cramping. Moreover, artificial sweeteners in general have been linked to anxiety, headaches, skin irritations, chest pains, mood swings, and itchy eyes (just to name a few). Even the newest sweetener on the market, sucrolose, contains chlorine, a well-known carcigen. Chlorine has been used in poisons gas, disinfectants, pesticides and plastics. Rawxies is committed to providing low sugar snacks that do not poison the human body.
WHAT IS PALM SUGAR AND WHY IS IT DIFFERENT THAN MOST TRADITIONAL SUGARS? Sugar gets a bad rep – rightfully so. However, not all sugars are created equal. Coconut Palm Sugar is derived from the sweet nectar of the sugar blossoms that grow at the top of the tropical coconut palm tree. Coconut Palm Sugar is naturally low on the Glycemic Index (GI) and is rated as a GI 35. In comparison, honey is GI 55 and Cane Sugar GI 68. Coconut Palm Sugar has been known to deliver a slow release of energy, as opposed to cane sugar which produces drastic ‘highs’ and ‘lows’. It should be noted that while Coconut Palm Sugar is high in Potassium, Magnesium, Zinc and Iron, that it is not ‘raw’ and has been heated about 105 degrees.
WHAT IS WILDCRAFTED VANILLA? There’s a reason very few companies use such a product, because it’s extremely expensive! Callie always jokes that if there is a fire, she’s grabbing the vanilla and running! Wildcrafted vanilla is the most wonderful and authentic vanilla available. The vanilla orchid is grown on the islands of the South Pacific, where the vanilla “bean” is harvested from the flower by hand. After curing in the sun for days, the vanilla is ground into a find powder and packaged in a certified organic facility. Ground vanilla is a potent antioxidant!
WHY ARE RAWXIES CONSIDERED A ‘PRE-DIGESTED’ FOOD? Rawxies are considered a pre-digested food, because they are not heated above 105 degrees. Heating food above this point kills it’s natural enzymes. Enzymes are what our body produces to break down certain foods. However, if the food is ‘living’, the body does not need to produce enzymes and therefore the food can digest itself. Predigested foods (those that are not heated above 105 degrees) are easily digested by the body and are a great option for anyone suffering from digestive disorders.
ARE RAWXIES CERTIFIED GLUTEN FREE? Rawxies are not Certified Gluten Free due to cost restrictions. However, Rawxies kitchen is gluten-free and sources Certified Gluten-Free ingredients (including oats). Rawxies is committed to Gluten Free products and hopes to eventually become a Certified Gluten Free food.”

I suppose it was just a matter of time until Run On Organic & Rawxies connected. My interest in Rawxies peaked as I learned about the release of the Omega Crunch products, which are paleo-friendly and grain free. I was eager to scour my local health food stores to find them. To my surprise, Callie England (founder of Rawxies) generously offered to provide me with the range of Rawxies products to try and share here on ROO. She also included a vibrant tote and “Stop Eating Crap” Rawxies motto shirt to rock–major rad!

My Thoughts on Rawxies Heart-Shaped Healthy Cookies:
Without a doubt, these healthy snacks are heads and shoulders above the traditional cookie or cracker. They are on their own planet, really. Jam packed with organic ingredients, these heart shaped cookies are delicious, fun and satisfying. I LOVE the use of wildcrafted vanilla. I find myself really gravitating towards all things vanilla–Rawxies being no exception.
Though these bars are not typically in line with my diet that is similar to a paleo-style of eating, they are invaluable in that:
-They are a great snack to have on hand for kids
-They are a gluten-free cookie (good tasting gluten-free cookies are hard to come by)
-They’re incredibly portable and convenient for on-the-go
-They’re in line with an organic way of eating (they are almost entirely organic!)
I found the Mocha Almond Fusion to be my kryptonite. I am a frequent coffee drinker, so the mocha flavor quickly grabbed ahold of me. The Mint Chocolate Chip flavor was another delicious cookie I enjoyed with coffee. I also see it being great with some coconut or almond ice cream! Lemon Poppyseed is a flavor I love for summer–so zesty and refreshing. The Banana Nut Bread cookie is the ultimate comfort flavor of the bunch–lets you enjoy the scrumptious taste of a classic with much better ingredients. If you are unsure of which one to try, buy them all! You won’t be disappointed and neither will your health/waistline 🙂
Rawxies Omega Crunch
My Thoughts on the Rawxies Omega Crunch:
These savory snacks are an absolute DREAM to have around. They’re everything I want to be eating: mostly organic, grain free, raw and delicious. I found myself walking around with the bag of Cheezy Smoked Paprika, eating them one after the next like a bag of potato chips. They’re dangerously tasty–but the best kind of dangerous. You can feel good about what you’re eating with Rawxies products.
I love how Rawxies includes wine pairing suggestions for each flavor. I have yet to try that! I like these Omega Crunch pieces as a post-run snack when I need a ready-to-eat snack. I’ve made it a habit to nosh on them alongside the stove as I’m waiting for my dinner to cook up.
All of the flavors are uniquely delicious, but the Cheezy Smoked Paprika is my favorite–it must be the kick of heat that makes this flavor stand out. That said, I loved having all three flavors on hand to have a variety. They have successfully tackled my salty tooth every time. Not only are these great to keep in the pantry at home, but I can see myself packing these in my Camelbak as a snack break during a long run or hike, as the seeds they contain would provide me with significant energy and “go” power.
I’d recommend these to any healthy minded individual. Actually, I’d recommend them to anyone, because they are phenomenal for just the taste alone! The fact that they are a high-quality, nutritious snack is icing on the cake. I will definitely restock my supply of these soon!
